Ingredients

  1. Aloo Dum Bengali Style
  2. Parboil potatoes with a little salt and allow to cool
  3. In a pan heat oil and saute the boiled potatoes with a little turmeric. Drain onto absorbent paper
  4. Chop the tomatoes to big pieces, wash chillies and cilantro and keep ready
  5. Grind the tomatoes, cilantro and green chillies in a blender without any water
  6. Chop onions, garlic and ginger finely.
  7. In a pan saute jeera, chopped onion garlic and ginger till the onions are translucent
  8. To this add the ground tomato paste and cook till oil leves the sides of the pan
  9. In a small bowl mix cumin powder, corriander powder and red chili powder with a little water
  10. Add this paste to the cooked tomatoes and cook for a couple more minutes. Add salt and sugar.
  11. Add the fried potatoes. Mix everything well. Garnish with cilantro
  12. Enjoy with hot pooris or roti
