Baked Vegetable Ratatouille

Ratatouille, a dish i had only ever heard of never tasted! On a whim I decided to give this a shot and keep it as healthy as possible! There’s a ton of veggies especially summer vegetables and very little cheese. There’s only one picture because I wasn’t sure how it would turn out so I didn’t take pictures along the way. I will definitely be making this again as it was a super hit in our house and I promise to take more pictures then!

Instructions
  1. Baked Vegetable Ratatouille
  2. Slice all the veggies into thin rounds using a mandoline slicer or knife
  3. Thinly slice the garlic and onion
  4. Heat oilve oil in a pan and saute the onion and garlic till cooked
  5. Add tomato paste, red chili powder, red chili flakes salt and pepper and cook it for 2-3 minutes
  6. Add half the tomato paste mix to the bottom of a baking dish
  7. Arrange the vegetables in concentric circles around the entire baking dish. Sprinkle a little salt and pepper and a tiny bit of olive oil on the veggies
  8. Add the remaining tomato paste mix.
  9. Sprinkle a few shredded leaves of basil, dot it with goat cheese and add the shredded mozzarella on top
  10. Bake for 20-25mins
  11. Enjoy baked vegetable ratatouille with a glass of wine!
