Chilli cheese toast is a name that has always fascinated me, but you may not believe it when i say that before i made this i had never tried it. I always wanted to either make it or try it out somewhere but nope hadn’t worked out for me. So finally when all the stars aligned for me to make it happen i read a few recipes and decided to tweak it to make it healthy and tasty. So here goes my version of multigrain bread chilli cheese toast with added health and flavor of avocados! Great lunch or brunch item. Kids didn’t even complain about the multigrain bread..cha-ching win-win! Enjoy this with a bowl of hearty Tomato soup
Delicious healthy chilli cheese toast with avocado
Wash and chop mint finely. Mix mint with goat cheese, add a little salt and red chilli powder. Keep this aside.
Wash and chop green chillies and mix it with the 4 cheese blend, keep aside.
Halve an avocado, remove pit and skin and thinly slice the avocado
Take 2 slices of bread. On the top of the first slice spread butter and place it down. On the inside spread mint- goat cheese mixture on both sides, place a few slices of avocado on buttered slice and sprinkle the 4-cheese blend on top. Cover with the other slice. Spread butter on top of the second slice of bread
Grill the sandwich in a panini maker or on the tava till you see it brown lightly and the cheese starts to melt.
Remove from heat, cut into triangles and serve. Goes great with ketchup or mint chutney.
