Who doesn’t like simple dal-chawal right? I mean so simple and yet somehow so satisfying. Those are the best combinations and quite healthy too. I liked dal for all those reasons nothing more, never realised i could be in love with it! Then there was something that changed my opinion and i fell in love with this simple dal head over heels. Let me tell you the story. Once upon a time, ok its not really that kind of a story but it’s interesting trust me! A big gang of us friends say about 10-12 families decided to go on a camping trip to a nearby lake. Normally one would take camping food like things you could barbecue or heat up on a camp fire right? Oh no we were not that easily satisfy-able kind of a group. We had taken a few rice cookers to make chawal and my friend Rachna had pressure cooked and bought a big batch of toordal, guess why? She made proper dal tadka right there on the campsite for the entire lot! With a bunch of people chopping onions and tomatoes the menu at our campsite that night was roti, barbecued paneer tikka, dal tadka and chawal with onion salad. The magic of her spicy hot AMAZINGLY TASTY dal that night under the cool sky with the right people sitting around a campfire made me fall in love with dal like i had never been before.Thank you my dear friend for turning around a simple dish into a splendid delicacy! Here is my version of dal tadka, take it outside and eat your meal under the stars on a summer night with your family and see if it recreates the magic of dal for you too! Enjoy!

Ingredients

Instructions
  1. Dal Tadka
  2. Saute finely chopped onion on medium heat till it is translucent and cooked. Add ginger, garlic and green chillies and continue to cook.
  3. Now add the chopped tomatoes and turmeric and cook till the tomatoes are well cooked.
  4. Add bayleaves and continue cooking the tomatoes
  5. Now add the red chilli powder and garam masala. Cook everything till you see the oil leave the sides of the pan
  6. Mash the cooked dal lightly and add it to the pan. Add salt, check seasonings. If you like it you can add a little lemon juice (optional)
  7. Add water and boil everything till you reach a semi thick consistency! Garnish with cilantro and enjoy it hot with rice.
