Paneer Butter Masala

This is yet another family favorite in my house. In fact this recipe is what I used to steal my husband’s heart. One of the few recipes i learnt before i got married from my aunt. It’s a really rich gravy with cashews and poppy seeds and will surely be a crowd pleaser. The addition of heavy cream kicks it up a notch. Indulge yourself in a delectable dish like this one once in a way and it’ll keep you going for a few weeks after :)

Instructions
  1. Paneer butter masala/ Butter Paneer
  2. Paneer: Cut into 1" cubes and sauté in butter till golden brown on both sides. Transfer the sautéed paneer to a bowl with warm water and keep aside.
  3. Soak cashew and khus khus in warm water for atleast 10mins.
  4. Boil 1 onion and 1 tomato. Drain water. Grind the boiled onion to a fine paste, keep aside. Grind tomato with cashew and khus khus, keep aside.
  5. Finely chop onions and tomatoes and keep it ready.
  6. In a pan heat some oil and butter, add chopped onions and saute till brown and translucent.
  7. To this add finely chopped tomatoes and cook well.
  8. Add all the spices and mix it well.
  9. Add the ground onion paste And cook for a couple of minutes
  10. Now add the tomato paste and cook for 5-7 mins.
  11. Add salt, sugar and bell pepper and water if too thick and cook another 3-4 mins.
  12. Add the sautéed paneer and cover and cook for 1-2 mins.
  13. Finally add heavy cream, mix well and transfer to a serving bowl. Garnish with some cream and cilantro and serve hot with rice or roti.
