Tasty eggless strawberry mousse cake. 100% homemade. As you will see it is not professional by any means but you cannot argue about the taste. For a country style homemade cake it looks and tastes amazing! Try it out and be prepared to be amazed and to receive compliments! Happy baking!

Instructions
  1. Delicious eggless strawberry mousse cake
  2. Preheat oven to 350o F
  3. Sift the all-purpose flour, baking soda and baking powder
  4. Mix the condensed milk, melted butter and powdered sugar. Mix it till there are no lumps and it looks smooth and homogeneous
  5. Add the dry ingredients to the wet mixture in 1/3 quantities and add milk in batches and mix it well. Ensure to mix all the dry with wet ingredients and milk. Now add finely chopped fresh strawberries (about 6-8) and mix.The cake batter is ready.
  6. Prepare two 8-inch round pans by greasing the pan and lining it with parchment paper. Grease the parchment paper and dust it with flour.
  7. Pour the batter into the 2 round pans till they are about 2/3 full. Bake for 25-30 mins. Check to make sure cake is baked by inserting a toothpick in the center. If it comes out clean its done
  8. Remove from oven and let it cool. Run a knife around the edges of the pan to loosen the cake and Invert onto plates.
  9. Cut the top of the cake to get a even surface
  10. Make whipped cream. Beat 3 cups of whipping cream with 6 tbsp of sugar till you get stiff peaks. Keep it in the refrigerator
  11. Puree strawberries and filter it through a mesh strainer. Add this puree to a pan and heat it. Add 1 tbsp sugar and agar agar and stir well. When it starts to thicken switch off and let it come to room temperature. Do not let it cool completely or it will harden like jelly
  12. Fold the strawberry puree into the whipped cream. Do not over mix and make it runny
  13. Save some plain white whipped cream to use as is
  14. Now arrange the base layer of the cake on a stand add a big layer of the mousse on it. Place the top layer of cake
  15. Start coating the sides of the cake with the mousse and gradually work your way around the entire cake
  16. Use a frosting bag cut the tip of the bag and insert your frosting tip. Now fill the bag with whipped cream and start to decorate the cake with whipped cream. See NOTES
  17. Finish the decoration with fresh sliced strawberries and place a few leaves of mint for the extra wow factor!

Whipped cream decorating alternative suggestion:
At this stage you can also use can whipped cream and the nozzle is perfect to decorate the cake.
