Szechwan/ Schezwan Fried Rice

Yummy Indo Chinese has to rank among my top 3 most loved cuisines! Fried rice, hakka noodles, chilly paneer and most importantly gobi manchurian! Oh here i go drool as i type! If i can gain weight for typing recipes I probably would be in the guiness book of world records! Lol! Here i present one version of my Fried Rice that is my husband’s favorite kind. I call this Szechwan Fried Rice because it is spi-cccyyy and has some bold flavors packed into it! Make sure you adjust seasonings if kids are planning on eating this.Also read the very last instruction and try that combination of Palak Paneer and Fried rice and let me know if you liked it ;) Enjoy!

Instructions
  1. Schezwan Fried Rice
  2. First wash and soak 1.5 cups of rice for 30mins. Drain water
  3. Cook rice preferably in a rice cooker with 3 cups of water, ensure to cook so the grains are apart
  4. In a large pan, heat olive oil and add onion, garlic and ginger. Saute till translucent
  5. To this add all the sauces, salt and pepper and the frozen vegetables
  6. Now add the cooked and partially cooled rice and mix lightly so the grains are not mushed
  7. Serve with another indo chinese gravy or just sriracha or ketchup! In our house we have taken a liking to eat this kind of fried rice with palak paneer! Weird? Not really.. Try it you might be surprised!
Recipe Notes

You can add a lot more veggies to this like thinly shredded cabbage, steamed broccoli, thickly grated carrots etc. when i made this i was pretty much out of all these and hence stuck to the frozen veggies that were available. I was even out of green onions! Oh well it still tasted amazing!
